My name is Kathlene Sullivan and I believe that I was born to tell stories. As a fairly recent transplant to Lancaster I was favorably impressed with the rich variety in the local Food and Dining scene and the passion of the professionals involved in it. So this blog is about food and dining and the importance of defining who we are, where we come from and what is important to us now. I hope you enjoy my stories.
One of the best-kept culinary secrets in Downtown Lancaster is Antonia Hinnenkamp and her East King Culinary. This creative producer of delicious ready-to-serve foods describes her little cottage industry as “Happy, local and seasonal food made with love.” Antonia styles herself a “cook” who favors regional recipes with a Mediterranean bent. East King Culinary serves up fresh; homemade dishes two days a week. Menus are posted via e-mail and Facebook page on Monday. Tuesday is for early morning shopping at regular, local suppliers such as Expressly Local and favored stands at Central Market, such as Green Circle Organic. Then it is home to cook. On wintry weeks it might be a classic Creamy Crimini Mushroom Bisque served with an Herbed Butter Baguette. The criminis are an echo of the previous weeks main dish of Spinach and Cheese Ravioli with Béchamel & Mushrooms. Her seasonal ingredients serve as ‘guest stars’ that often make a repeat appearance when seasonal availability allows. The Wednesday entrée could feature a dish inspired by her Southern Italian heritage such as Pasta with Homemade Meatballs, including organic ground chuck from Country Meadows Butchers at Central Market, imported Pecorina Romano and homemade breadcrumbs. The entrees often come in creative sizes from “No Neighbors-Intimate Dinner for Two” right up to “Family” and “Neighbor Party “ portions. Antonia often references her local suppliers, adds anecdotes about the family origins of a recipe and a sparkling enthusiasm for her ingredients. There was a point last autumn when I came to view her eggplants as old friends and knew that I would miss them dreadfully once the local beauties left Market for the winter. During the recent Holiday season her version of Sugo di Pesce con Linguine made my mouth water and my heart yearn for memories of a Nonna just like hers!
If there were a guiding philosophy behind Antonia’s cooking it would be her belief that “Breaking bread together is the best way to connect with the ones you love.” The flavorful, homemade and healthy meals from East King Culinary help her wide array of customers do just that. In brief, Antonia is nothing less than a local treasure. She connects the food she prepares so carefully with the people and the places that produce it and brings it all full circle to the busy lives and the families who will enjoy it. You’ve certainly made Lancaster come to life for me, though I had only vistited the surrounding countryside once.
